Low blood sugar can occur when glucose levels drop dramatically a few hours after consuming carbohydrates, such as white rice, white bread, or any food containing simple sugar. In effect, the body, after consuming simple carbohydrates produces an abundance of insulin, in response to the blood glucose spike. People who are susceptible to insulin spikes after eating carbohydrates need to adopt a hypoglycemia diet in order to avoid the peaks and valleys associated with the overproduction of insulin.

Avoid sodas and other soft drinks that are high in sugar and corn syrup because these carbohydrates are rapidly broken down and absorbed into the blood. The result is that the body produces excess amounts of insulin to break down the glucose and an imbalance results. Simple carbohydrates break down into glucose so fast that the body has only response and that is to produce insulin, but an insulin peak can cause medical complications, including coma.

Some people eat a bowl of corn flakes in the morning, believing that a bowl of corn flakes is a good breakfast choice. But, corn flakes break down into glucose rapidly, causing an insulin spike. The better choice is a bowl of oatmeal, which is a complex carbohydrate which takes longer to break down and digest. Complex carbohydrates help balance insulin production compared to simple carbohydrates that are quickly broken down and absorbed.

Foods that keep glucose levels balanced include fish, chicken, and red meats. These foods help to keep glucose levels, and insulin levels at safe levels. Eggs help keep insulin levels stable, and if one is concerned about cholesterol, one can eat egg whites.

Some people are limiting their cholesterol levels, but eggs can still fit into their meal plan. Simply eat egg whites rather than whole eggs in order to limit one's cholesterol intake. A bowl of hot oatmeal along with an egg white cheese omelet, is a great meal to enjoy in the morning. For a mid morning snack, have a fresh apple.

The reason why some recommend limiting fruits such as bananas is because bananas are quickly broken down and converted into glucose. High glucose levels are associated with increase insulin production which leads to low blood sugar. Fruits such as pears, apples, and papaya, are high in fiber, and take longer to break down, thus avoiding insulin spikes.

People who have to eat complex carbohydrates as a staple, need not forgo desserts. But, they have to be more conscious of their dessert menu than other people. For instance, one should avoid chocolate cake, but one can enjoy a sliced apple with a gob of peanut butter.

People, who experience dramatic drops in their glucose levels because of insulin spikes after eating simple carbohydrates, have to adopt a hypoglycemia diet in order to keep their sugar levels stable. Avoid drinking soft drinks high in sugar because these drinks can cause insulin levels to spike and cause glucose levels to drop dramatically. It is important to start the day right with an adequate breakfast and a good meal to have in the morning is a bowl of oatmeal, and an egg white omelet. Oatmeal is a complex carbohydrate and an egg white omelet is loaded with protein, which is an appetite suppressant.
